Changing the default dictionary in Mail

How does one change the default dictionary in Mail (Panther)? I can't find it in preferences, or in mail help and I'm sick of finding that my mac disagrees with my spelling of colour, harbour, labour etcetera.

Welcome to MacTalk

1) Open System Preferences -> International -> Language
2) Click "Edit," check "British English" then click OK.
3) Scroll down to the bottom of the list, and drag "British English" to the top.
4) Log out and log back in.
